10:25 pm: Wedge
Oatmeal Stout

1lb chocolate
.5lb roasted
.25 blk patent
.75 60 L Crystal

1.2 lbs oats (cooked first and then steeped, lots of goo came out and was lost, maybe cook oats in big brew pot first? and then steep?)

6lbs dark malt
1.5 muntons DME

1oz Northern
1oz Cascade (beginning of boil)

.5oz fuggles last 5 min

the steeping of the oats was a beautiful sight.  the oozing goo from the sack of lumps that looked like lard were extremely appetizing; however, jeff threw it away before i was able to snag a bite.  there were little clumps of the oat goo floating in the pot, then jeff made a dead accurate statement by saying that the bubbles were "mount st helens-ing" instead of just bubbling out normally during the boiling process.  also, remember to warm up the malt stuff in warm water, because incubating it like a mother hen to an egg does not work well.  - kellie

Bottled on April 21 with Brewmasters Landsberg, Sisson, Kinniburgh and the Danish dude.  Strawberry soda caps.  Did it up with priming sugar.

This one is way chocolate.  I'd knock it back by .25 to .5 lb next time.  Up the hop factor too some, maybe 1.25 or 1.5 oz northern.

.25lbs 60 L Crystal

.5lb 80 L Crystal

.5 lb roasted

.25 blk patent

boiled 35-40 min

Northern 1.75oz

Fuggles .5 (15min?)

I feel dark.  Dark as night!  Summer stout yeah.  Bottled and brewed at the same time.  Worked beautifully.

Bottled: Apr 7, priming sugar, white grolsh caps, mostly green grolsh bottles, some brown

Note shelf is organized bottom to top, not ready to most ready

I like this one a lot, a lot of hop action and body to it.  Could knock off maybe .25 oz hops but that's it.  Other malt balances are solid. -zaq

Honey Brown

.25 blk patent
.25 chocolate
1 lb 40L American Crystal

6lbs amber malt extract

slightly less than 1oz northern 60min
slightly less than 1oz cascade 15min

slightly more than 1lb honey after the boil

bottled 3/24, primed with corn sugar, white harle caps, brown grolsh bottles

This one is really good.  Carbonation factor is way up, probably due to the honey.  Good flavor balance, maybe a 60L crystal or a little bit more stuff in it to make it a tad less watery.

the hop/malt residue at the end is not that bad

Saturday evening discussed as potential weekly brew day

66 12 oz.; 1 16oz brown; 20 16oz green; 17 24oz brown; 6 24 oz green.

after waiting three weeks to be completely split apart, i find myself uncontrollably apprehensive; almost to the point of hysterical. i always get a bit excited when the "seal is broken," so to speak, but what will i pour into who's mouth? this new line of me has thrown me into the very depths of the proverbial adolescent existential crisis. but, i guess none of my questions can be answered for another three weeks, so i guess all i can to for the time being is sit around a ferment over things...

Tastes solid, definately better than the brown before.  Hops are kind of strong, tastes bitter, can taste more black patent and should taste more chocolate?  Cut down on the hops in the future.

Brown Ale

Brewed Feb 5
Bottled Feb 16

1lb crystal 60L
.25 lb briess choclate

steeped for 30 min in nylon stocking (knee high) maybe thigh high next time (two man job)

6lb gold/pale malt

3/4 nugget 11.6% at start (1hr)
1oz Willamette 4.5% (30)
1oz “ (15)

boiled an extra 10 min

filled bucket with 3 gallons water, brew pot (below handle rivets) holds 3 gallons
no bubbles in airlock, took lid off on 2/11, there was residue along top

We had no priming sugar, used cane sugar probably about 3-4 oz

Tasted almost that there wasn't enough stuff in it, watered down but also lacking malt.  Lost some malt factor but not proportional to hops.  Tasted kind of like the 2nd red ale.
